These Past Two Months

Hello!

I can't believe it's been two months since my last post. Time is flying by, and so much has happened since February! 

The biggest news is that I matched to pediatric residency in Denver! 

We are so excited to be moving from Albany to Colorado at the end of May. It's a fantastic program in a city full of life. We can't wait! I might be changing the name of this blog to "Simply Denver," but I'm not sure yet... thoughts?





Below are a few photos of some of what we've been up to. Spring has finally arrived, and we're looking forward to getting outside more over the next month! (Crafts will be on hold as we start packing and preparing for the transition.)












 
I'm headed to Seattle next week for my sister's wedding. Then my little sister and I will be road-tripping back to the East Coast, so expect some fun posts in May!

Hello!

I hope you are enjoying your holiday season and preparing for Christmas! I love this season for the extra music and baking. In terms of music, if you're looking for some new Christmas music, our church is putting together an Advent Album. My hubby and I are in one of the church bands and have really enjoyed playing and singing with these folks! Find the free downloads here: http://terranovachurch.org/advent/



Along with plenty of singing, I've been doing a little baking recently. I'm still in the midst of interview season for Pediatric Residency, but I had a dream about these Cinnamon Yum Yums that my mom makes every year, so naturally I asked my sister to send (text) me the recipe.



Ingredients:
1 cup butter
5T sugar
2 cups flour
1t vanilla extract

Instructions:
  1. Preheat oven to 350 degrees Fahrenheit
  2. Cream together sugar and butter
  3. Add flour and vanilla extract. Mix well.
  4. Form into balls, pressing slightly, placed on cookie sheet.
  5. Bake at 350 degrees Fahrenheit for 15-18 minutes.
  6. While still warm, roll in 1/2 cup sugar mixed with 1/2 teaspoon cinnamon



I can't believe I've never made these before. Talk about delicious and easy!

Perfect Study Break Salad

Hello Friends!

Time for an update! Since my last post, I finished my surgery rotation, studied and took 2 more national board exams, and started packing for a 3 week trip to the west coast! It has definitely been a busy month... This post was actually supposed to be published a few weeks back, but I never actually go around to finishing it (something about studying for 12 hours a day...) Anyway, hope you enjoy it! I should have some more time for crafting and blogging over the next couple of weeks.





Okay. It's noon, I've been studying since 6am, and I'm hungry. Sure, I had a piece of toast with peanut butter on it around 7am, but my brain needs extra fuel these days. The problem is, I've only got a couple of minutes for a lunch break, and I don't have time to make something fancy. So, I open the fridge and let what's left of my creative brain juices go to work...




That's what happened, and it was amazingly delicious. I'm calling it "Spicy shrimp and black bean salad with avocado and sesame oil dressing"

Here's the recipe so you can enjoy this little bit of heaven, too! (Makes one serving).

Ingredients:

6 large shrimp, cooked, and cut in half
Trader Joe's Organic Broccoli Slaw (or lettuce of your choice)
A couple large spoon fulls of black beans (I used Fresh Market's sodium free black beans)
1/2 avocado
3 large basil leaves, chopped (or torn, in my case)
2 teaspoons of sesame oil (more if you desire)
Sriracha to taste
Dash of garlic salt
Dash of onion powder

Steps:
1. Combine all ingredients in a bowl. Mash/mix until you are satisfied with the texture and you feel like the slaw is appropriately coated in avocado-sesame oil goodness. That's it!



Obviously you could do any number of things to improve upon this recipe based on what you've got in your refrigerator, but this is a good and easy start!

Fresh Apple Cake

Hello!

I am officially on "spring break" for 2 weeks! I just finished my pediatric rotation and will start my family medicine rotation next. I wish this meant two whole weeks of crafting and relaxing, but I do have quite a few other responsibilities to take care of. Even so, I'm looking forward to spending a good deal of time baking, crafting, photographing, and of course relaxing. The hubby and I will be heading to Florida again next weekend. Yay for sun and warm weather!!


To get this break started right, I made my grandmother's Fresh Apple Cake. This was the first time I have ever made it... despite enjoying it a TON growing up. My mom has seriously perfected her mother-in-law's tasty recipe. I'm happy to say mine turned out great! Aside from peeling the apples, the cake is quite easy to put together. The full recipe for print is below. Hope you enjoy!


Cake:
  • 1c oil
  • 3 eggs
  • 1t vanilla
  • 2c sugar
  • 2c flour
  • 4c thinly sliced apples, peeled
  • 2t cinnamon
  • 1t baking soda
  • 1/2t salt
  • 1t nutmeg
  • 1t cloves
  • (1c chopped pecans or walnuts - optional)

Preheat oven to 350 degrees. Beat eggs, oil, and sugar. Add vanilla and mix well until fluffy. Sift together dry ingredients (flour and spices). Add to other mixture and beat well. Add apples and nuts. Blend well. Batter will be thick. Bake in greased 9 x 13 glass dish at 350 degrees for 45-60 minutes. Let cool.


Icing:
  • 12 oz softened cream cheese
  • 1.5t vanilla
  • 4.5t melted butter
  • 1.5c powdered sugar
Mix all ingredients well, spread on cooled apple cake.


 


So fresh and delicious! Also, this is my absolute favorite cream cheese frosting recipe. It's the perfect balance of sweet + cream cheese flavor. Yum!

Sushi Making with the Little Sis

Hello Friends! This post is very overdue.... I've started my third year of medical school and it's super busy! I'm loving my three month internal medicine rotation, but I'm finding that there is hardly any time left over between 6 days a week in the hospital for 12 hours a day, church, and time with the hubby. Still, I'm going to do my best to try and keep up! Thanks for understanding!!

Over my brief summer break, Andrew and I traveled back to Seattle to spend time with family. We also visited my grandparents at Priest Lake in Idaho (my most favorite place in the entire world). While there, my little sister Lisa and I decided it would be fun to make sushi. Let me just say, we've never made sushi before, but we volunteered to make dinner for the whole fam, so the pressure was on.... Fortunately for us, it was so easy and turned out great! The family loved it, and we had a super fun time preparing dinner together!



Here's how we made our sushi:

Supplies:

Bamboo sushi mat (you can find these at most Asian markets)
Saran wrap to cover your sushi mat
Bowl of water to rinse your hands while rolling
Bowl of rice vinegar

Ingredients:

3-4 cups sushi rice, cooked as package indicates
10 Nori seaweed sheets
10 Imitation crab meat sticks/blocks, cut in half length wise
1 avocado, peeled and sliced thinly, lengthwise
1 cucumber, peeled and sliced thinly, lengthwise into matchstick thick pieces
1 carrot (optional), peeled and sliced thinly, lengthwise into matchstick thick pieces
Wasabi paste
Soy sauce

(*we also made sushi rolls with smoked salmon and cream cheese instead of the imitation crab. You can also use sesame seeds, but the ones in the spice cupboard at the cabin were from the 1980's... so we omitted this step.)

Steps:

  1. Cover sushi mat with saran wrap on both sides. This helps the rice not stick while you make your roll.
  2. Place all ingredients on a cutting board or plates on your work surface so you can assemble quickly.
                 
                     
  3. Cut/break seaweed sheets in half (if you want fatter/thicker rolls, don't do this step)
  4. Place seaweed on half of the sushi mat closest to you.
  5. Dip your fingers in the bowl of water and spread some sushi rice evenly over your seaweed. It can be tricky because the rice is sticky, but the water helps quite a bit. (Notice Lisa's sticky fingers... and her lovely nail polish ;) gotta love summer!)

                     
  6. Dip your fingers in the bowl of rice vinegar and dab the top of the rice.

                                     
  7. Once your seaweed is covered with the rice, flip the entire seaweed/rice over so that the seaweed side is toward you and the rice is on top of the saran wrap.
  8. Place all your ingredients onto the seaweed, starting at the edge closest to you.

                     

                     

                     
  9. Roll your sushi, using the bamboo sushi mat. As you start rolling, press firmly along the entire roll to make it tight. Lift up on the mat as you roll, and continue rolling/pressing until you have rolled it into a complete sushi roll. It sounds complicated, but it's not... check out the pictures below, or check out some great videos online :)






 
    10.  Wrap up the sushi roll in some saran wrap until you are ready to cut and serve.
    11.  Proceed with making all the rest of the rolls. 


Feel free to mix up ingredients. We made a variation of the California roll... we're calling ours the Priest Lake roll. We also used some smoked salmon and cream cheese to make another variety. So fun and so tasty!

(Of note, Lisa and I, being musicians, made up a song about our sushi making. It is sung to the tune of "Bamboo" by Peter Paul and Mary... if you'd like to know the lyrics to our tune, let me know and I'll see what I can do...)
